This recipe combines the cozy comfort of creamy chicken pot pie with the irresistible flavor of those famous Red Lobster buttery biscuits, all in one easy pan.
Why My Recipe is Different Than Others
Viral Tik Tok chicken cobbler casserole used the deliciously cheesy, Red Lobster Cheddar Bay Biscuits mix for a top crust. So I took this idea and made my version of a chicken pot pie casserole and made it with NO canned creamed soups.
This homemade chicken flavored gravy sauce brings more flavor and is healthier than making it with canned soups.

Shortcuts for Red Lobster Chicken Casserole
Rotisserie Chicken - Want to skip the chicken cooking step? Stop by the store on the way home and grab a rotisserie chicken for a shortcut that brings flavor.
Canned Chicken - Consider another inexpensive shortcut, using canned chicken. It's tender cooked, white meat.
Ingredients for Cheddar Bay Biscuits Chicken Pot Pie
I prefer to skip canned cream soups in my recipes, so my recipe uses a few other simple ingredients to create a rich chicken-flavored sauce for the veggies and chicken.

- Butter - Saute the onion/garlic and thicken the filling
- Onion, chopped - Adds flavor to the filling
- Garlic, minced - Adds flavor to the filling. Use garlic powder if you prefer.
- Flour - To thicken the filling
- Chicken Bouillon - Turkey broth or Chicken broth works great, too
- Heavy Whipping Cream - Adds richness to the creamy sauce
- Cooked chicken - I used a rotisserie chicken this time, but sometimes I make an extra Sous Vide Whole Chicken or Juicy Sliced Turkey Breast to put in the freezer for this casserole.
- Frozen Mixed Vegetables - I used peas, carrots, green beans, and corn
- Salt and Black Pepper - to taste
- Red Lobster Cheddar Bay Biscuit Mix - Made according to directions on the box
- Sharp Cheddar Cheese, shredded - Added to the biscuit mix

How to Make Red Lobster Biscuit Chicken Casserole
- In a small saucepan, melt 3 Tablespoons of butter over medium-high heat.
- Saute onions and garlic until tender. Be careful not to brown the garlic.
- Add the flour and cook until thickened and lightly browned.
- Add broth and bring to a boil. Cook for 2-3 minutes until thickened.
- Remove from heat and add cream.
- Spread the chicken in a single layer in the bottom of an 11x7 casserole dish and top with frozen vegetables.
- Pour sauce over the top and stir to combine.
- Make the biscuit mixture according to package being careful not to over stir. Top the chicken filling with the biscuit topping. Leave room between biscuits to allow room for browning.
- Bake at 425 for 14-16 minutes or until biscuit tops are golden brown and the undersides are cooked through.
- Brush the top of the biscuits with melted butter and seasoning packet mixture and serve this chicken pot pie with red lobster biscuit mix warm.
Hint: After making this a few times, I found that allowing room around each drop of biscuit dough ensures the biscuits cook through. So using an 11x7 baking dish is ideal. A 9x13 pan will also work. Cooking time may vary depending on the pan size.
Regardless, make sure the bottom sides of your biscuits are baked through and not doughy.






Substitutions
Chicken pot pie is all about using what you have. Mix and match to make it appeal to your family.
- Vegetables - instead of using frozen veggies, use canned or fresh. If using canned vegetables, drain the liquid well. For fresh, boil them in a covered saucepan in a small amount of water until tender before proceeding.
- Use Leftover Veggies - Use leftover veggies and mix them all for the vegetables in this casserole. This is a great way to use up leftover vegetables.
- Use Leftover Chicken or Turkey - Use a rotisserie chicken, canned chicken, turkey, cooked chicken breasts, etc.
- Vegetarian Chicken Cobbler - skip the chicken and use vegetable broth or bouillon for a veggie-only version.
- Gluten-Free Chicken Cobbler - Use the Gluten-Free Red Lobster Biscuit Mix for the topping and replace the flour in the filling with cornstarch. If using cornstarch do not add it to the butter, instead add it to the cold water or broth to make a slurry.

Storing Red Lobster Biscuit Chicken Casserole
Allow leftovers to cool slightly and put in a shallow container. Refrigerate leftovers for 2-4 days.
Top Tip
Lift the biscuit to see if the underside is completely cooked. If it appears to be underdone and the tops are brown enough, loosely cover the biscuit tops with aluminum foil to prevent the tops from getting too brown while the bottoms finish cooking.

Made this casserole recently - store didn’t have the cheddar biscuits so I used the Rosemary Garlic. We thought it enhanced the chicken flavor but I plan to try with the cheddar. We loved it - super easy, great flavor! Thx!!

I have made this recipe twice now and loved it both times. The first time I tried it, I bought the Red Lobster Rosemary Garlic Parmesan biscuit mix as that’s what was available. Yesterday I made it with the Cheddar biscuit mix. Both were great but honestly- that Rosemary flavor with the chicken was superb! I think it’s a winner for me. Thx for all your great recipes!!
