Cornflake and Peanut Butter Candy

If you grew up in the Midwest, you likely have had this sweet, crunchy, peanut butter-packed, no-bake sweet treat.

This humble candy is so simple, that you will likely commit it to memory after only making it once.

Ingredients

  • Peanut Butter - richly flavored and slightly sweet. I use creamy, but crunchy works great, too.
  • Corn Syrup - makes the candy chewy consistency happen.
  • Sugar - brings the sweet to the party.
  • Salt - elevates and balances this sweet and crunchy peanut butter candy.
  • Cornflakes - crunchy, flaky fun base for this candy.
  • Optional add-ins - coconut, raisins, dried cranberries, chocolate chips, butterscotch chips, roasted peanuts, etc.

How to Make Cornflake Candy

  1. In a heavy saucepan over medium heat, mix together the peanut butter, corn syrup, sugar, and a pinch of salt.
  2. Cook until the sugar is dissolved and the mixture is just starting to boil. Remove from heat.
  3. Add the cornflakes and gently stir to combine.
  4. Use 2 spoons to scoop the candy onto wax paper and allow it to cool and set up.

Hint: Do not boil the peanut butter mixture or your cookies will be dry and hard. I like mine to be slightly chewy.

Substitutions & Variations

  • Frosted Flake Cookies - Substitute frosted flakes cereal for the cornflakes in this recipe.
  • Crunchy Peanut Butter - Use crunchy peanut butter to add extra crunch
  • Peanut Cornflake Cookies - Add a handful of roasted peanuts when adding the cereal for even more peanut flavor.
  • Chocolate Chip Peanut Butter Cornflake Candy - Add a handful of chocolate chips with the cornflakes for chocolate chip cornflake candy.
  • Cornflake Candy Bars - Lightly press the mixture into a greased 9x13 pan. Allow to cool completely and then cut into squares.

Holiday Cornflake Candy Ideas

Christmas Wreath Candy - dye your mixture green before adding the cornflakes, shape them into wreaths, and put mini M&M's on for decoration.

Easter Candy Nests - from your cornflake candy into cute little Easter nests and fill them with Cadbury Mini Eggs.

Storage

Cornflake Candy is a sticky treat that is best stored in a covered container. I like to place a piece of wax paper between the candy layers to keep them from sticking together.

This candy will last for 5-7 days at room temperature.

Top tip

Don't cook the mixture long. I just cook mine long enough for the sugar to dissolve and it barely starts to boil. This keeps your candy chewy instead of hard and crunchy.

Notes
