Drive any back road in Kansas this time of year and you'll pass a sorghum field. Tall, rust-red heads swaying in the wind, and most folks never give them a second look. I'm here to change that.

Kansas grows more sorghum than any other state in the country. Yet somehow, most of people have never cooked with it. That ends today, because this Sorghum Cereal Snack Mix is the best possible introduction.

Sorghum syrup is earthy, a little tangy, and deeper than honey or plain sugar. Think of it as molasses's mellower cousin. Stirred into melted butter and vanilla, it bakes onto crunchy Chex, salty pretzels, and roasted nuts as a glossy, sticky glaze. The salty-sweet balance is what makes this Chex Mix impossible to stop eating.

And here's the fun part. Once the mix cools, toss in M&Ms in your team's colors for a tailgate, or red and green for the holidays. Same pan, same 20 minutes, totally different snack table.

How to Make Sorghum Cereal Snack Mix

1. Set Up the Pan: Heat the oven to 300°F and line a 15x10 pan with parchment. A low oven dries the coating without scorching the sugars. The parchment keeps the sticky glaze from welding itself to the pan.

2. Build the Base: Toss the cereal, pretzels, and nuts together in the pan. Mixing the dry ingredients first means the coating lands evenly.

3. Make the Sorghum Coating: Microwave the butter, sorghum, and vanilla together until melted and smooth. Sorghum can bubble up when it's hot so use caution and microwave in 30 second increments.

4. Coat Everything: Pour the coating over the base and stir until every piece is glossy. Stir gently.

5. Bake and Stir: Bake 20 to 25 minutes at 300°F, stirring well every 10 minutes to ensure every piece of snack mix is coated.

6. Cool Completely, Then Add the M&Ms: Let the mix cool on the parchment until it's fully set. The glaze crisps up as it cools.

  • Rice Chex: Corn Chex, Crispix, Wheat Chex, or a mix of whatever boxes are in the pantry.

Why is my snack mix chewy instead of crunchy?

It may need more time in the oven, or it wasn't stirred enough so the coating pooled. A humid kitchen or storing it before it's fully cooled will also cause it. Let it cool completely on the parchment, and bake a few extra minutes next time.

What does sorghum syrup taste like, and can I swap it?

It tastes earthy, a little tangy, and lighter than molasses. Honey or maple syrup will work in a pinch, but they change the flavor and can brown faster, so keep an eye on them.

Ingredients
  

  • 5 cups Rice Chex cereal or other cereal of choice
