Oven Baked Hamburger Steak with Gravy
If you grew up on Oven Baked Hamburger Steaks with Gravy, this oven-baked version will take you right back to the retro Formica table at Grandma's house.
The one-pan hamburger steaks are tender and full of beefy flavor. But that gravy...
I could drink it straight out of a cup. However, I usually try to be a bit more civilized and pour it over Twice Baked Mashed Potatoes or Red Potatoes in Air Fryer, instead.

Ingredients for Hamburger Steaks with Brown Gravy
- Ground Beef - 90/10 or 85/15 burger is best for this recipe since you don't drain the cooking fat off.
- Kosher Salt - adjust to your preference
- Black Pepper
- Garlic Powder - easy access garlic flavor, but use fresh if you like
- Cooking Oil - I use olive oil here, but any oil you like will work
- Worcestershire Sauce - adds the umami we all crave
- Onion, finely chopped - for inside the hamburger steaks
- Onion, sliced in rings - holds up well in the gravy
- All-Purpose Flour - to thicken the gravy. Use cornstarch for a gluten free version.
- Water - Adjust the amount for thicker/thinner gravy.
- Beef Bouillon - I like Better Than Bouillon brand the most for flavor and ease

How to Make Oven Baked Hamburger Steaks with Brown Onion Gravy
- Preheat the oven to 375 degrees F.
- In a large bowl, combine and lightly mix ground beef, salt, pepper, garlic powder, Worcestershire sauce, and ¼ of a large onion, finely chopped.
- Divide the mixture into 6 equal patties about 1-inch thick. Avoid handling the patties too much as this causes them to be dry and tough.
- Over medium-high heat, preheat a large oven-proof skillet. Add the cooking oil. Brown the patties on both sides.
- Remove the patties from the skillet, leaving behind the cooking juices to saute the sliced onions until tender.
- Sprinkle in the flour, salt, and pepper, stirring constantly for 1-2 minutes.
- While stirring, add the cup of water and the beef bouillon. Stir until no lumps remain.
- Return the patties to the skillet, cover with a lid or foil, and bake for 20-25 minutes. Add more water if the gravy gets too thick. For well-done Hamburger Steaks, cook until the internal temperature is 160 degrees F.
- Serve with mashed potatoes, rice, or buttered noodles.
- Leave a review and comment on the website to share your experience with others.

Hint: Let the patties actually brown before moving or flipping them. Do not smash the patties down as this pushes out the tasty cooking juices.
Substitutions & Variations for Hamburger Steaks with Brown Gravy Recipe
- Stove Top Hamburger Steaks with Gravy - Finish the steaks on the stove top instead of the oven by cooking covered on medium-low, if desired.
- Ground Turkey Steaks with Gravy - Use ground turkey, ground pork, or ground chicken, if desired.
Storing Hamburger Steaks and Gravy
Store leftover Oven Baked Hamburger Steaks in the fridge for 3-5 days. Reheat in a 375-degree oven, over medium heat on the stovetop, or in the microwave.
Top Tip
For tender, moist burgers, don't over-handle when shaping them. The goal is to have the patties stick together without ruining the fat particle structure.
FAQ
You may have over handled the patties. Gently press the ground beef together until it holds together, but be careful not to destroy the little fat pockets in the beef.
You need some fat in this beef for the tastiest smothered steak dinner. I recommend 85/15 or 90/10 ground beef.

Comfort food in a flash! The kids plowed into these and sopped up the brown gravy. Make this tonight!
This recipe is super easy and super yummy! My picky eater loves it! Finishing the steaks in the oven keeps them juicy and tender.
Nice! I'm so glad it meets your picky eaters' standards. 🙂 Thank you for the review.
This is a go-to recipe at our house. We do the gluten-free version with corn starch. Great in the oven or on the stove, plus it really does work well with sausage, pork, or turkey, too.
Oh!! I lov all the different ways you've made it!
Wow! You have found all kinds of ways to make it fit your family! Thank you for sharing!
Delicious and simple. I liked that it didn’t have a ton of ingredients and those that everyone should have on hand. Went together just as recipe read. It’s a keeper for me! Thx!!
