If you grew up on Hamburger Steaks with Gravy, this oven-baked version will take you right back to the retro Formica table at Grandma's house.
The hamburger patties, seared and then baked into tender deliciousness, are fantastic, but the star of this show is the dark brown, beefy, onion-infused gravy.
I could drink this gravy straight out of a cup, but I usually try to be a bit more civilized and pour it over Twice Baked Mashed Potatoes or Red Potatoes in Air Fryer, instead.
Served alongside Jalapeno Cream Corn and a pan of Cornbread Sticks, schmeared with butter and drizzled with honey. Finish the meal off with Apple and Blackberry Crumble or Southern Chocolate Chip Pecan Pie. Oooooowwweeeee -- Childhood level happiness achieved.
With this one pan method, Oven Baked Hamburger Steaks with gravy are the perfect weeknight meal. Using pantry staples, it's budget-friendly, kid-approved comfort food.

Ingredients
- Ground Beef - 90/10 or 85/15 burger is best for this recipe since you don't drain the cooking fat off.
- Kosher Salt
- Black Pepper
- Garlic Powder
- Cooking Oil
- Worcestershire Sauce
- Onion, finely chopped
- Onion, sliced in rings
- All-Purpose Flour - to thicken the gravy. Use cornstarch for a gluten free version.
- Salt & Pepper, to taste
- Water - Adjust the amount for thicker/thinner gravy.
- Beef Bouillon

Instructions
- Preheat the oven to 375 degrees F.
- In a large bowl, combine and lightly mix ground beef, salt, pepper, garlic powder, Worcestershire sauce, and ¼ of a large onion, finely chopped.
- Divide the mixture into 6 equal patties about 1-inch thick. Avoid handling the patties too much as this causes them to be dry and tough.
- Over medium-high heat, preheat a large oven-proof skillet. Add the cooking oil. Brown the patties on both sides.
- Remove the patties from the skillet, leaving behind the cooking juices to saute the sliced onions until tender.
- Sprinkle in the flour, salt, and pepper, stirring constantly for 1-2 minutes.
- While stirring, add the cup of water and the beef bouillon. Stir until no lumps remain.
- Return the patties to the skillet, cover with a lid or foil, and bake for 20-25 minutes. Add more water if the gravy gets too thick. For well-done Hamburger Steaks, cook until the internal temperature is 160 degrees F.
- Serve with mashed potatoes, rice, or buttered noodles.

Hint: Let the patties actually brown before moving or flipping them. Do not smash the patties down as this pushes out the tasty cooking juices.
Substitutions & Variations
- Stove Top Hamburger Steaks with Gravy - Finish the steaks on the stove top instead of the oven by cooking on medium-low, if desired.
- Ground Turkey Steaks with Gravy - Use ground turkey, ground pork, or ground chicken, if desired.
Storage
Store leftover Oven Baked Hamburger Steaks in the fridge for 3-5 days. Reheat in a 375-degree oven, over medium heat on the stovetop, or in the microwave.
Top tip
For tender, moist burgers, don't over-handle when shaping them. The goal is to have the patties stick together without ruining the fat particle structure.
FAQ
You may have over handled the patties. Gently press the ground beef together until it holds together, but be careful not to destroy the little fat pockets in the beef.
You need some fat in this beef for the tastiest smothered steak dinner. I recommend 85/15 or 90/10 ground beef.
