Chewy Honey Peanut Butter Cookies are magically sweet with honey. Making them a wholesome sweet treat for peanut butter lovers.

Chewy Peanut Butter Honey Cookies

Honey farming is magical work. I have a few fantastic friends who share the fruits of their bee's labor with me and these Honey Peanut Butter Cookies are a fantastic way to feature the richness of that golden nectar of nature.

One of my honey sources lives a few miles from me and generously trades me a jar or two of honey for dinner. Don't tell them, but I would have them over for dinner any ol' time even if they didn't bring honey.

Two other bee-wrangling friends brought several generous jars to the farm when visiting from Colorado!

One of the things I love about farming and food is that it brings people together to enjoy and share bounty. I'm thankful for good friends who are as sweet as the honey they share.

Honey makes this fantastic peanut butter cookie more tender and more delicious than usual.

These chewy peanut butter cookies are the Baby Angel's favorite Christmas recipe to make for our family's annual Goodie Making Day. Of course, hers has to have a chocolate Kiss on top.

Top Tips

Make short work of making the cookie dough by using a stand mixer or electric mixer.

Be careful not to overbake these cookies. Only the bottoms should be lightly browned.

Push a sweet Hershey's Kiss into the top of each cookie while still warm for a chocolate peanut butter treat.

Ingredients

Simple ingredients in this wholesome chewy peanut butter cookie.

  • Unsalted Butter, Softened--Brings the richness and body for the cookie
  • Creamy Peanut Butter--If you like a little extra crunchy, use crunchy peanut butter for even more peanut flavor
  • All Purpose Flour--Provides the body to the cookies
  • White Sugar--Sweetens the dough.
  • Honey--Use this instead the traditional brown sugar in the classic peanut butter cookie
  • Egg--Serves as the binder to make the dough.
  • Baking Soda--Leavening agent that makes the cookies rise.
  • Baking Powder--Leavening agent that makes the cookies rise.
  • Pure Vanilla Extract--Warm flavor
  • Optional--Additional Sugar for Rolling, Hershey Kisses, Peanut Butter Cups, Chocolate Chips, etc.

How to Make Honey Peanut Butter Cookies

  1. In a large bowl with the paddle attachment, beat softened butter and peanut butter for 30 seconds.
  2. To the peanut butter mixture, add ½ cup flour, sugar, honey, egg, baking soda, baking powder, and vanilla. Mix on low speed until combined. Don't over-mix.
  3. Beat in remaining flour.
  4. Chill cookie dough for at least an hour, or until easy to handle.
  5. Shape into 1 inch balls. Roll dough balls in additional sugar.
  6. Flatten slightly by crisscrossing with the tines of a fork.
  7. Bake cookies on a parchment-lined baking sheet at 375 degrees for 7-9 minutes or until bottoms are golden brown. If your cookies are a bit larger, they may need to bake 10-12 minutes.
  8. Cool baked cookies on a wire cooling rack.

FAQ

My cookies are flat and crunchy, what did I do wrong?

Be sure to preheat your oven for 15 minutes or so before baking. You can check to be sure your oven is baking at the proper temperature by testing it with an oven thermometer.

Also, make sure your cookie sheet is completely cool before placing your balls of dough.

My cookies are dry and crumbly, what did I do wrong?

Make sure you carefully measure your flour. I never weigh my flour when cooking, but I am very careful to stir, scoop carefully, and never tap my flour.

My cookies didn't raise and are flat, what happened?

Make sure your baking soda is fresh. Each container has an expiration date on it, you better check yours.
If your baking soda is expired, use it for cleaning or to freshen your fridge, but do NOT use if for baking.

Substitutions and Variations

I don't recommend low fat peanut butter or natural peanut butter for this recipe as it would require modifications.

Crunchy or creamy peanut butter work well. I have not tested this recipe with other nut butters.

Skip the crisscross pattern and push a Hershey's Chocolate Kiss in the center after they come out of the oven.

Storage

Store cookies in an airtight container at room temperature. Best eaten within 3-5 days. These cookies do freeze well in a freezer container.

Serving Ideas for Cookies

As if you need help thinking of ways to eat these old-fashioned chewy peanut butter cookies... Ha!

But if you're really stumped... put a scoop of vanilla ice cream between 2 cookies and freeze for some pretty dang good ice cream cookie sandwiches!

Crumble a few up on top of a bowl of ice cream.

Or just serve them straight up with a glass of cold milk or hot coffee.

Equipment

Cookie Sheets are so handy to have around. You need at least 2 so you can alternate them and allow them to cool between batches.

Cooking Racks are important so your cookies cool without sticking together or to the plate/countertop.

Cookie Scoops make it easy to scoop your dough and keep all the cookies similar in size so they cook evenly. A small or medium cookie scoop works for this chewy cookie.
