Old Fashioned Lemon Icebox Pie

If you follow my website, you know I love a good lemon dessert. And Pies. Really, I just love desserts. But for today, I will profess my love of the tart, citrusy, lemon desserts such as my easy Lemon Jello Cake and Lemon Blueberry Sugar Cookies. Which now that I mention those... I'm craving them...

But today, I'm sharing a recipe for an Old Fashioned Lemon Icebox Pie made with sweetened condensed milk, poured into my golden brown Soda Cracker Pie Crust, and Topped with my favorite Fresh Whipped Cream.

This lemon pie recipe was special enough to make for my Momma and Aunt Penny for Mother's Day but let's be real... it's easy enough to make on a Tuesday.

Ingredients

A can of sweetened condensed milk makes this list of ingredients short and simple.

Ingredients for easy lemon pie.
  • Soda Cracker Pie Crust
  • Sweetened Condensed Milk
  • Large Egg Yolks
  • Fresh Lemon Juice
  • Fresh Whipped Cream
  • Lemon Zest

Instructions

  1. Pour the sweetened condensed milk into a medium bowl. Whisk in egg yolks. Add the lemon juice and whisk until thoroughly combined.
  2. Allow the mixture to set and thicken.
  3. Spread the lemon mixture into the baked crust and smooth the top.
  4. Bake at 350 degrees for 16 minutes or until the filling has set.
  5. Cool for 5 minutes on a wire rack.
  6. Refrigerate the pie uncovered for at least 1-2 hours or overnight.
  7. Just before serving, cover the top of the pie with fresh whipped cream and serve.

Substitutions & Variations

  • Crust - Just as yummy in a graham cracker crust or my Easy 3 Ingredient Single Pie Crust
  • Lime Pie Filling - Looking for a lime pie instead? Swap out an equal amount of lime juice and lime zest for the lemon in this recipe.

Storage

Store this pie covered in the refrigerator for up to 3 days.

Top tip

Use fresh lemon juice for the best lemon flavor. Plus, the lemon zest brings so much flavor to this pie.

  • 1 14 ounce can Sweetened Condensed Milk
  • 4 large Egg Yolks
  • ½ cup Fresh Lemon Juice
  • 1 Soda Cracker Pie Crust baked and cooled
  • Fresh Whipped Cream
  • Lemon Zest freshly grated

Method
 

  1. Pour the sweetened condensed milk into a medium bowl. Whisk in egg yolks. Add the lemon juice and whisk until thoroughly combined.

  3. Spread the mixture into a baked and cooled Soda Cracker Pie Crust and smooth the top.
