I love bar cookies and gooey blondie recipes! And these little layered beauties are the perfect sweet treat.
Ingredients
- unsalted butter - brings fat and richness to the bar
- white chocolate chunks, divided - stirred into each cookie layer, the little chunk of sweet, milk chocolate is a sweet surprise. Make sure to choose a good quality chocolate.
- large eggs - always use large eggs for baking
- white sugar - adds the sweetness to this not-too-sweet blondie dough
- almond extract - enhances the flavors of the bars
- all-purpose flour - needed to bring it to a dough
- salt - highlights the flavors and balances the sweetness
- raspberry jam - provides a more intense raspberry layer of flavor
- fresh raspberries - adds a fresh, tart, fruity layer
- almonds - crunchy texture

Directions
- Preheat and Prepare: Preheat your oven to 325°F and grease a 9-inch square baking dish. Line the baking pan with parchment paper if you prefer taking your bar cookies out of the baking pan for cutting.
- Melt the Butter: In a microwave-safe bowl, melt the butter. Then add half of the white chocolate. Do NOT stir.
- Whisk the Eggs and Sugar: In a large mixing bowl, whisk together the eggs, sugar, and almond extract until well combined and slightly frothy.
- Incorporate the White Chocolate Mixture: Gradually pour the melted butter mixture into the egg mixture, stir.
- Add the Dry Ingredients: Using a rubber spatula, stir in the all-purpose flour and salt into the wet ingredients, just until combined. Be careful not to overmix to maintain the best texture.
- First Layer: Pour half of the blondie batter into the prepared pan, dot with fresh raspberries, and bake for 15 minutes or until set.
- Middle Layer: Microwave the raspberry jam until it easily spreads. Top the cooked layer with the jam making sure to get to the edges.
- Top Layers: Stir remaining white chocolate into the remaining batter. Carefully spoon the remaining batter over the raspberry jam, ensuring an even layer.
- Garnish and Bake: Top with fresh juicy raspberries and chopped almonds. Bake in a preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the blondies to cool in the pan for at least 30 minutes before cutting into squares.
FAQ
Cocoa butter, milk solids, and sugar are the main ingredients in sweet white chocolate. It is devoid of cocoa solids found in brown chocolate.
For cookie bars, test with a wooden pick inserted at the center of the pan. If it comes out with a few moist crumbs clinging to it, the cookies are done.
I like baking in a glass pan for bar cookies. Being able to see the degree of darkness on the bottom of my bars helps me gauge doneness. Move the pan up in the oven if the bottoms are getting too brown before fully baked.
Substitutions and Variations
Fresh Fruit - Use other small, soft berries in these bars for variety. I love making them with blueberries or blackberries when in season. I match the jam to the berry for consistency of flavors.
Nuts - leave them out if you prefer. Or swap the almonds out. Try pecans, English walnuts, or even pistachios.
Chocolate - I used a delicious white chocolate bar for this batch. But white chocolate chips, dark chocolate chips, or any kind you like work here. You can even use chopped-up white almond bark if that's what you have.
Almond Extract - Use vanilla extract if you prefer.
How to Store Blondies
I typically store my bar cookies in the pan covered tightly with plastic wrap or aluminum foil. You can also cut them into squares and put them in an airtight container with a tight-fitting lid.
