Strawberry Cake with Filling starts with a mix and is layered with a creamy filling. An easy homemade dessert with bakery-style results.

Strawberry Cake
I'm not ashamed. I start this strawberry cake with a box mix.
I learned this little upgrade when making my Chocolate Cake with Cream Cheese Filling.
But the cake mix is only the beginning. What makes this strawberry and cream cake special is the creamy cream cheese filling tucked inside. A creamy filling is studded with white chocolate chips that soften but give that little surprise bite of mild richness.
The strawberry cake then gets finished with the easiest frosting situation. I mix whipped topping with instant vanilla pudding for a light, fluffy layer that feels fancy with almost no effort.
This beautiful pink cake is perfect for Valentines Day and Easter, but it's so easy you will want to make it year round.

Ingredients
- Cake Mix - Any brand of strawberry cake will work.
- Cake Mix Ingredients - My cake mix called for 3 eggs, oil, and water.
- Cream Cheese - Make sure it's nice and soft so it blends well.
- Granulated Sugar - for sweetening the filling.
- Oil - I used canola oil, but vegetable oil or any neutral oil works.
- Vanilla - Ups the flavor in the filling.
- Egg - Just one more egg to make this filling an almost cheesecake texture.
- White Chocolate Chips - I settled on white chips after sampling it with both white and semi-sweet chocolate chips to a host of people. However, I would not be sad with the darker chocolate chips.
- Whipped Topping - Thaw it out before using. Or try my homemade whipped topping , if you prefer.
- Instant Vanilla Pudding Mix - Make sure you get the instant pudding.
- Freeze Dried Strawberries - Crunch them up to top the cake for more strawberry flavor, bright red color and a little crunch.

How to Make Strawberry Cake with Filling
You'll make the strawberry cake as directed on the box and pour it into the prepared 9x13 pan.
In a medium bowl combine the cream cheese and sugar and beat it until it's smooth then add the oil, egg, and vanilla. Mix again until smooth. Fold in the chocolate chips.
Dollop the cream cheese filling into the cake batter. I place mine in rows where I think it will be sliced to make sure everyone gets filling in their piece of cake.
Using a rubber scraper, poke the filling down into the cake batter. But do not stir.
Bake until cake tests done. I use a tooth pick to ensure it's baked fully. Allow to cool in the pan completely.
When the cake has cooled, fold the instant pudding into the whipped topping then spread on the cake. Crumble freeze dried strawberries over the frosting and serve.
Store in fridge.

- Preheat the oven to 350 degrees. Grease and flour the cake pan or use baking spray with flour.Cake Mix Ingredients
- Make the boxed cake mix as indicated on the box.1 Strawberry Cake Mix
- Pour the cake batter into the prepared pan.
- In a medium bowl, make the filling by mixing together softened cream cheese and sugar. Then stir in vanilla, oil, and egg.8 ounces Cream Cheese, ½ cup Granulated Sugar, ¼ cup Oil, 1 large Egg, 1 teaspoon Vanilla Extract
- Lastly, fold in the white chocolate chips.1 cup White Chocolate Chips
- Drop the cream cheese filling into the chocolate cake batter by the spoonful. Allow the filling to sink into the batter. Swirl a knife through the filling a bit to make sure the filling is covered by the batter.
- Bake for 40 to 50 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Cool completely.
- In a medium bowl, fold instant vanilla pudding into the whipped topping. Spread evenly over cake.8 ounces Whipped Topping, 3 ounce Instant Vanilla Pudding Mix
- Sprinkle crushed freeze dried strawberries on top.¼ cup Freeze Dried Strawberries
