Walking Taco Casserole

Who doesn't love going to the local game and getting those little bags of chips filled with all the taco fixings?

I like my tacos loaded like a supreme taco. Lots of chips, seasoned taco meat, cheese, tomatoes, avocados, onions, sour cream, and the kitchen sink. There isn't enough room in those little chip bags for me to have my kind of walking taco.

Enter the Supreme Walking Taco Casserole -- an easy way to serve tacos with less mess.

Ingredients

  • Ground Beef
  • Taco Seasoning -- I always keep Best Chicken Taco Seasoning on hand and use for all my tacos, beef or chicken
  • Black Beans, rinsed
  • Chopped Green Chilies
  • Diced Tomatoes, canned
  • Nacho Doritos
  • Corn Chips such as Fritos
  • Sharp Cheddar, shredded -- I prefer to shred my own. It just taste better
  • Lettuce, chopped -- I use romaine, but any crisp lettuce will work
  • Cilantro
  • Green Onion, sliced
  • Cherry Tomatoes, halved
  • Avocados, sliced
  • Sour Cream

How to Make Supreme Walking Taco Casserole

  1. In a large skillet, brown the ground beef until slightly crispy.
  2. Stir in the taco seasoning, canned tomatoes, canned chopped green chilies, and rinsed black beans. Add ¾ to 1 cup of water. Simmer for 20-25 minutes or until flavors have melded and the liquid has reduced.
  3. Line the bottom of a 9x13 casserole dish with corn chips and Nacho Doritos.
  4. Sprinkle ½ of the cooked ground beef mixture over the chips and top with ½ of the shredded cheese. Repeat the layer of chips, beef mixture, and cheese.
  5. Bake in 350 degree oven for 15 minutes or until cheese has melted.
  6. Top with toppings of choice and serve.

Hint: For tender ground beef, sprinkle ¼ teaspoon of baking soda over the ground beef and allow it to rest for 10 minutes before cooking.

Substitutions & Variations

  • Ground Pork Walking Tacos - use ground pork or chicken for a delicious variation.
  • Walking Taco Toppings - Top with any toppings you like -- more cheese, jalapeños, etc.
  • Vegetarian Walking Tacos - the beef hamburger can be replaced with a plant-based burger or just double the beans to make this vegetarian

Storage

Store leftovers in the fridge for 3-5 days. The chips will get a bit soggy and it reheats best in the oven or AirFryer.

Top tip

For tender ground beef: sprinkle ¼ teaspoon of baking soda over the uncooked ground beef and allow it to rest for 10 minutes before cooking.

What is a Walking Taco?

In case you don't know, a Walking Taco is a hand-held take on a taco served at local ballgames, county fairs, etc. It is a small bag of Fritos or Nacho Doritos with the taco fixings spooned right into the chip bag.

  • 14 ounce can Black Beans rinsed
  • 4 ounce can Chopped Green Chilies

  • ½ bag Nacho Doritos
  • ½ bag Corn Chips such as Fritos
  • 8 ounces Sharp Cheddar shredded
  • 1 head Lettuce chopped
  • Cilantro
  • Green Onion sliced

    Love the Walking Taco Casserole! Tried it for the first time this week and the entire family enjoyed it! We used ground chicken (because alpha gal) and it was really tasty. The crisp, fresh ingredients on top of the crunchy warm, melty casserole is amazing!
