Substitutions & Variations
- Ground Pork Walking Tacos - use ground pork or chicken for a delicious variation.
- Walking Taco Toppings - Top with any toppings you like -- more cheese, jalapeños, etc.
- Vegetarian Walking Tacos - the beef hamburger can be replaced with a plant-based burger or just double the beans to make this vegetarian
Storage
Store leftovers in the fridge for 3-5 days. The chips will get a bit soggy and it reheats best in the oven or AirFryer.
Top tip
For tender ground beef: sprinkle ¼ teaspoon of baking soda over the uncooked ground beef and allow it to rest for 10 minutes before cooking.
FAQ
In case you don't know, a Walking Taco is a hand-held take on a taco served at local ballgames, county fairs, etc. It is a small bag of Fritos or Nacho Doritos with the taco fixings spooned right into the chip bag.
Go heavy on the fresh lettuce, tomato, and onions to create a bit of a salad to top this casserole. Or make a fresh corn salsa and cabbage slaw.
