My love for rice pudding goes way back to the days of Elementary School where the lunch ladies made large pots of the stuff.

Those lunch ladies were so nice. They offered it to us kids with or without raisins and they let us sprinkle on our own cinnamon.

God love lunch ladies. This classic treat was magic from the stove top.

Seriously, I loved this creamy dessert as a kid. As an adult, I kind of forgot about rice pudding. My life has been incomplete. Until I started making this easy recipe.

Top Tips

  • My favorite rice to use for rice pudding is long-grain white rice. It has the starch needed to make a creamy rice pudding.
  • To keep rice pudding from burning and sticking be sure to stir constantly after adding the sweetened condensed milk and use a thick-bottomed saucepan.
  • Use leftover cooked white rice to make delicious rice pudding even easier.

Ingredients

  • Water - Follow the directions on your rice for amounts.
  • Long Grain White Rice - or use basmati rice, brown rice, Jasmine rice, etc. If using instant rice, your initial cook time will reduce according to the package. Or if you have leftover rice, turn it into a delicious dessert.
  • Sweetened Condensed Milk - NOT evaporated milk. This one has been sweetened with sugar
  • Kosher Salt - helps to balance the sweetness
  • Whole Milk - feel free to use milk alternatives such as coconut milk, almond milk, etc.
  • Egg, beaten - thickens and brings richness. But be sure to follow the directions so you don't scramble the egg
  • Vanilla Extract - brings warm flavor
  • Butter - brings a nice creaminess and texture
  • Golden Raisins - Regular raisins, dried cranberries, or any dried fruit you like are also tasty
  • Ground Cinnamon and/or Nutmeg - brings a warm flavor
  • Optional Stir-Ins - cocoa powder, chocolate chips, pecans, fresh fruit, etc.

How to Make Rice Pudding with Sweetened Condensed Milk

Cook your favorite rice in a heavy bottomed pot with a tight fitting lid.

When rice is tender and all the water has been absorbed, add the sweetened condensed milk, salt, and raisins. Cook and stir over medium heat until thick and creamy. Be sure to stir constantly to keep it from scotching.

In a small bowl, add beaten egg to the whole milk.

Remove the pot of rice from heat and stir in the egg/milk mixture.

Then return to cook on medium-low heat for 2 minutes more until thickened to your liking. Add a splash of milk if it gets too thick.

Add vanilla, butter, and a sprinkle of cinnamon or nutmeg to taste.

I like to serve in little individual bowls warm. The individual servings makes a simple dessert seem even more special.

Place pudding in a shallow airtight container, cover tightly with plastic wrap, and store in the refrigerator for 3-5 days.

Can Rice Pudding be Frozen?

Yes, to freeze rice pudding spoon the pudding into freezer bags. Leaving a space at the top of the bag to allow for expansion. Lay flat in the freezer until frozen the stack to save space. Thaw in the refrigerator overnight or in the microwave using the defrost setting.

Ingredients
  

  • 2 cups Water
  • 1 cup Long Grain White Rice
  • 1 can Sweetened Condensed Milk
  • ¼ teaspoon Kosher Salt
  • ¼ cup Whole Milk more as needed
  • 1 large Egg beaten
  • 1 teaspoon Vanilla Extract
  • 1 Tablespoon Butter
  • ½ cup Golden Raisins
  • Ground Cinnamon and/or Nutmeg

Method
 

  1. In a medium heavy bottomed pot with a tight fitting lid, cook 1 cup of rice according to the package directions.
  2. When rice is tender and all the water has been absorbed, add the sweetened condensed milk, salt, and raisins. Cook and stir over medium heat until thick and creamy consistency. About 8 to 10 minutes. Stir constantly to prevent sticking to the bottom of the pan.
  3. In a small bowl, add beaten egg to ¼ cup milk.
  4. Remove rice from heat and stir in butter and egg/milk mixture. Cook on medium-low heat for 2 minutes more or until desired thickness. Add a splash of milk if too thick.
  5. Add vanilla, butter and a sprinkle of cinnamon or nutmeg to taste.
  6. Serve in individual bowls either warm or cold. Cover leftover rice pudding with plastic wrap and place in fridge.
