Sausage Breakfast Smash Tacos are a perfect fusion of juicy sausage, fried egg, and crispy cheese, nestled in a warm toasted tortilla.

Have you seen the TikTok videos for Smash Burger Tacos?

I love this idea! Super flat patties of meat with a crunchy lacy edge, topped with a flour tortilla that soaks up the cooking juices and makes the taco shell crunchy like a quesadilla, topped with cheese. Brilliant.

These crunchy tacos are all about maximizing flavor and creating the perfect crust. I wanted to get this in a breakfast tacos recipe, too.

So to create Sausage Breakfast Smash Tacos, I used a hot cast iron pan to sear the sausage quickly and topped it with a flour tortilla, fried cheese, and an egg. Woo Wee! It's a filling morning meal that's so good, that it guarantees a great day.

Ingredients for Sausage Smash Breakfast Tacos

  • Small Flour Tortillas - I used the soft taco size
  • Ground Sausage - Make sure it has plenty of flavor and some fat
  • Shredded Cheese or Sliced Cheese -Cheddar, Monterey Jack, or your favorite blend
  • Egg - Free-range eggs are so tasty
  • Optional toppings - salsa, avocado slices, chopped tomatoes, diced onions, cilantro, hot sauce, crunchy chili onion oil, etc.

How to Make Breakfast Smash Burger Tacos

  • Heat cast iron skillet over medium-high heat.
  • Place the sausage patty into the hot pan and place the flour tortilla on top. Smash down firmly on top of the tortilla until there is a thin layer of sausage that reaches the edge of the tortilla and has no thick spots. You are looking for it to a be supremely thin patty.
  • Leave the sausage meat to cook until the edges have a nice brown crust. It will be cooked in a matter of minutes, 3 to 4.
  • Flip over and allow the tortilla to brown and get crispy on the outside. Set aside.
  • In the same skillet, place shredded or sliced cheese and allow the cheese to brown on the edges. This can be done with residual heat in the pan or on low heat. Remove the cheese and place it on top of the sausage layer.
  • Cook egg, as desired. Place on browned cheese.
  • Add taco toppings as desired. Fold into a taco shape and enjoy.

Top Tips for Sausage Breakfast Smash Tacos

Use a turner or potato masher to press the sausage flat under the tortilla.

If the sausage is lean, you may need to add a little butter or oil to crisp the edges of the sausage and tortilla.

The fried cheese adds a divine textural element, but skip it if you're in a hurry.
