Optional toppings salsa, avocado slices, chopped tomatoes, diced onions, cilantro, hot sauce, crunchy chili onion oil, etc.
Instructions
Heat cast iron skillet over medium-high heat.
Form sausage into patty. Do not over handle as this makes patties tough.
3 ounces Ground Sausage
Place the sausage patty into the hot skillet and place the flour tortilla on top. Smash down firmly on top of the tortilla until a thin layer of sausage reaches the edge of the tortilla and has no thick spots. You are looking for it to be a supremely thin patty.
1 small Flour Tortilla
Leave the sausage meat to cook until the edges have a nice brown crust. It will be cooked in a matter of minutes, 3 to 4.
Flip over and allow the tortilla to brown and get crispy on the outside. Set aside on a plate.
In the same skillet, place shredded or sliced cheese and allow the cheese to brown on the edges. This can be done with residual heat in the pan or on low heat. Remove the cheese and place it on top of the sausage layer.
½ cup Shredded Cheese or Sliced Cheese -Cheddar
Cook egg, as desired. Place on browned cheese.
1 large Egg
Add taco toppings as desired. Fold into a taco shape and enjoy.
