All that's left to do is to add Roasted Romaine Salad or Applesauce Jello on the side, and a complete supper is ready in under 30 minutes.

Ingredients
- Red Potatoes or Yukon Gold Potatoes, quartered -- I like the small ones for this recipe, so no peeling is required
- Onion, sliced
- Bell Pepper, sliced or diced
- Olive Oil
- Kosher Salt, to taste
- Black Pepper, to taste
- Bratwurst -- Choose any flavor you like. I often use Jalapeno Brats for the added flavor

Instructions
- In a medium bowl, mix together quartered red potatoes, sliced onions, and bell peppers. Toss with olive oil, salt, and pepper.
- Pour into the Air Fryer basket.
- Top with brats, leaving plenty of room around each brat.
- Air Fry at 385 degrees F for 8 to 10 minutes. Flip the brats and cook another 3 to 5 minutes.
- Remove the brats and set aside to rest when fully cooked and golden browned.
- Cook the potatoes and onions for another 10 minutes or until golden brown and tender.
Hint: Air Fryers vary, so check the progress of cooking regularly to prevent overcooking.



Substitutions & Variations
- Oil - Use any high-temperature oil you like, such as vegetable oil or coconut oil.
- Russet Potatoes - peel and cube russet potatoes if you prefer.
- Vegetables - try adding vegetables of your choice, along with the potatoes, such as carrots. If using a softer veggie such as broccoli, zucchini, or fresh green beans, add it in the last 6-8 minutes of cooking.
Storage
Place leftovers in an airtight bowl or wrap with plastic wrap. Store for 3 to 5 days.
Top Tip
Do NOT pierce brats before or during cooking. This lets all of the juices out and can result in dry brats.

A fully cooked brat will feel firm when squeezed gently. Of course, you can always use a thermometer to check the internal temperature. It should reach 160 degrees F.
