Pulled Pork Quesadillas are one of the easiest ways to turn a single batch of pulled pork into a fast, satisfying dinner.
I start with tender, slow-cooked pork, and turn it into crispy, cheesy quesadillas. Crispy tortillas, melty cheese, and flavorful pulled pork come together in less than ten minutes, making this recipe perfect for busy weeknights.

Ingredients
Leftover pulled pork and simple pantry staples come together to make the best quick dinner you have had in a while.
- Butter - to saute the veggies and coat the tortilla for browning
- Onion, diced - sauted to a tender, golden brown to bring out the sweetness
- Jalapeño, minced - brings a little heat and flavor to the quesadilla. Remove the seed and the white membrane to reduce the heat of this pepper or leave it out altogether if you prefer.
- Leftover Pulled Pork - I love to cook my pulled pork in the roaster oven
- Flour tortillas - I like the soft taco sized ones that are 8 inches
- Cheese of your choice - I used sliced pepper jack this time, but love cheddar cheeses, Monterey Jack, or any flavorful, melting cheese.

How to Make Pulled Pork Quesadillas
- Heat a large skillet over medium-high heat and melt half of the butter. Add the onion and jalapeño and sauté until softened. Stir in the pulled pork and cook just until heated through, then transfer the mixture to a plate.
- Place one flour tortilla in the pan and spread the pulled pork mixture evenly over it. Add the cheese, then top with a second tortilla that's been buttered on one side, buttered-side up.
- Cook until the bottom tortilla is golden brown and crisp. Carefully flip and cook the second side until browned and the cheese is fully melted.
- Remove to a cutting board, cut into quarters, and serve with sour cream, chopped green onions, salsa, or any toppings you like.
Hint: Try using mayonnaise instead of butter for coating your quesadillas.

How to Store Leftover Quesadillas
Store in the fridge in an airtight container for 2 to 3 days.
