Smoky Pulled Pork Quesadillas with melty cheese and crispy tortillas. An easy weeknight dinner or crowd-pleasing way to use leftover pork.

Leftover Pulled Pork Quesadillas

Pulled Pork Quesadillas are one of the easiest ways to turn a single batch of pulled pork into a fast, satisfying dinner.

I start with tender, slow-cooked pork, and turn it into crispy, cheesy quesadillas. Crispy tortillas, melty cheese, and flavorful pulled pork come together in less than ten minutes, making this recipe perfect for busy weeknights.

My Pulled Pork in the Roaster Oven recipe is a simple, hands-off way to make the pulled pork that sets you up for three meals.

Enjoy a pulled pork dinner, then use it here for quesadillas, and finish the leftover pulled pork off with my Pulled Pork Tater Tot Casserole when you're ready for a third easy, no-stress dinner down the road.

Cook smarter, not harder.

Ingredients

Leftover pulled pork and simple pantry staples come together to make the best quick dinner you have had in a while.

  • Butter - to saute the veggies and coat the tortilla for browning
  • Onion, diced - sauted to a tender, golden brown to bring out the sweetness
  • Jalapeño, minced - brings a little heat and flavor to the quesadilla. Remove the seed and the white membrane to reduce the heat of this pepper or leave it out altogether if you prefer.
  • Leftover Pulled Pork - I love to cook my pulled pork in the roaster oven
  • Flour tortillas - I like the soft taco sized ones that are 8 inches
  • Cheese of your choice - I used sliced pepper jack this time, but love cheddar cheeses, Monterey Jack, or any flavorful, melting cheese.

How to Make Pulled Pork Quesadillas

  1. Heat a large skillet over medium-high heat and melt half of the butter. Add the onion and jalapeño and sauté until softened. Stir in the pulled pork and cook just until heated through, then transfer the mixture to a plate.
  2. Place one flour tortilla in the pan and spread the pulled pork mixture evenly over it. Add the cheese, then top with a second tortilla that's been buttered on one side, buttered-side up.
  3. Cook until the bottom tortilla is golden brown and crisp. Carefully flip and cook the second side until browned and the cheese is fully melted.
  4. Remove to a cutting board, cut into quarters, and serve with sour cream, chopped green onions, salsa, or any toppings you like.

Hint: Try using mayonnaise instead of butter for coating your quesadillas.

Serving Suggestions

  • For a simple weeknight meal - serve with a fantastic side like Jalapeno Creamed Corn and simple fresh salad
  • For a twist make it a BBQ Pulled Pork Quesadilla by adding your favorite BBQ sauce
  • If making Pulled Pork Quesadillas for a crowd, make the filling then bake on a sheet pan in a 400 degree oven for 10 to 15 minutes, flipping for even browning.

How to Store Leftover Quesadillas

Store in the fridge in an airtight container for 2 to 3 days.

Top Tip

Reheat quesadillas in the oven at 400 degrees until heated through. Or in the Air Fryer for 8 minutes.

FAQ

How do I keep quesadillas from getting soggy?

Don't overload with filling and avoid excess sauce. Cooking in a light coating of butter helps create a crisp tortilla.

Can I use any pulled pork for quesadillas?

Yes. Smoked, slow cooker, Instant Pot, or roaster oven pulled pork all work. Just make sure it's tender and not overly sauced so the quesadillas stay crisp.

What's the best cheese for pulled pork quesadillas?

A good melting cheese is key. Monterey Jack, Colby Jack, cheddar, or a blend all work well. For extra melt, avoid pre-shredded cheese if possible.

LOVE this use for planned-over pulled pork! Sometimes I make it with BBQ sauce and sometimes I make it more Mexican flavored. Love it both ways!
