Heat a large skillet over medium-high heat and melt half of the butter. Add the onion and jalapeño and sauté until softened. Stir in the pulled pork and cook just until heated through, then transfer the mixture to a plate.
Place one flour tortilla in the pan and spread the pulled pork mixture evenly over it. Add the cheese, then top with a second tortilla that’s been buttered on one side, buttered-side up.
Cook until the bottom tortilla is golden brown and crisp. Carefully flip and cook the second side until browned and the cheese is fully melted.
Remove to a cutting board, cut into quarters, and serve with sour cream, chopped green onions, salsa, or any toppings you like.
