Easy Instant Pot Cheeseburger Soup
A good hearty soup hits the spot when I'm craving comfort food when cold weather sits in.
My family is split on potato soup. Some love it, some not so much. But the whole family loves it when I make a batch of Instant Pot Cheeseburger Soup. I find it to be like potato soup but even better.
This cheesy soup boasts a creamy potato soup base, but the ground beef brings a rich meatiness. I love that the carrots and celery bring more nutrition and beautiful color to the soup as well.
Add your favorite cheese, green onions, and bacon to the top for even more flavor.

Ingredients
With just a few basic ingredients and a few minutes, you can have a delicious soup on the table on the next cold night.
- Lean Ground Beef
- Onion, diced
- Carrots, diced
- Celery, diced
- Basil, dried
- Garlic powder or Minced Garlic
- Tony Chachere's Creole Seasoning
- Black Pepper
- Chicken or Beef Broth
- Potatoes, cubed--russet potatoes work well
- Parsley, minced
- Butter, softened
- All Purpose Flour
- Milk or heavy cream
- Sour Cream or Cream Cheese
- Sharp Cheddar Cheese, shredded--Use Velveeta Cheese, if preferred
- Favorite Toppings--green onions, shredded cheese
How to Make Instant Pot Cheeseburger Soup
- In Instant Pot, cook ground meat on the saute function, until browned. Drain excess grease.
- Leave the Instant Pot on the saute setting. Add onions and garlic. Cook until tender, 2-3 minutes.
- Add carrots, celery, basil, Tony's, chicken broth, parsley, and pototes.
- Cook until vegetables are tender. Cook time varies.
- In a small bowl mash together softened butter and flour to create a paste. Add to the potato mixture and cook until thickened.
- Turn off heat and add milk, cheese, and sour cream.
- Serve topped with green onions and more shredded cheddar cheese.

Use a paste of equal parts of softened butter and flour to thicken a hot soup without worry of having lumps.

EQUIPMENT
I'm not usually one to like kitchen gadgets because I don't like storing them. But my Instant Pot Aura Pro has proven to have many uses in my kitchen.
The specific Instant Pot I have has been discontinued, but I found the Instant Pot Max to be similar, and it has a sous vide setting.
Substitutions and Variations
This Instant Pot Cheeseburger Soup is one of my family's favorite soups as written, but if you want/need to make some changes, go for it. Here are a few to consider:
- Instant Pot Keto Cheeseburger Soup--swap cauliflower for the potatoes and use cream instead of milk for a low carb version of this soup.
- Vegetable broth, beef Broth, or bouillon instead of chicken stock works great.
- Ground turkey, ground pork, or ground chicken can be substituted for ground beef.
Crock Pot Cheeseburger Soup
Make this soup in the slow cooker instead, if desired.
After browning the meat, garlic, and onions in a large skillet, transfer to the Crock Pot and add carrots, celery, broth, potatoes, basil, garlic powder, and Tony's. Cover and cook on low for 4-6 hours or on high for 3-4 hours or until vegetables are tender.
Add the butter/flour paste and cook on high until thickened. Add milk, sour cream, and cheese. Stir until cheese is melted.
Storage
Allow the soup to cool slightly, then put in a shallow airtight container to refrigerate for 3 to 5 days.
