Easy Lasagna Soup

Hearty soups are a miracle food. All of the yumminess, but less mess. This cheesy One Pot Lasagna Soup recipe is a fantastic way of having a delicious classic lasagna dinner without all the work and mess.

You don't even have to boil lasagna noodles!

Delicious soup recipes with tender noodles cooked al dente in a meaty sauce all in one pot is a miracle dish, to me.

Serve some crusty garlic bread, and for even more veggies, add a crisp salad, and you have a meal an Italian would be proud of (and everyone will eat!).

Ingredients

The ingredient list may seem long, but everything is generally a staple and easy to throw together on busy weeknights.

  • Lean ground beef and/or Italian sausage
  • Olive oil
  • Yellow onion
  • Garlic
  • Tomato paste
  • Tomatoes, crushed or diced
  • Sugar
  • Kosher salt
  • Black pepper
  • Fresh basil or dried
  • Red pepper flakes
  • Chicken broth or bouillon and water
  • Lasagna noodles, broken into smaller pieces
  • Fresh spinach
  • Ricotta cheese
  • Parmesan cheese
  • Mozzarella cheese
  • Parsley to garnish

How to Make Lasagna Soup

Easy recipe + simple ingredients = the perfect comfort food.

  1. In a large Dutch oven or other large pot, heat olive oil over medium-high heat. Add ground meat, cook until browned.
  2. Add minced garlic and diced onions. Cook until translucent.
  3. Add tomato paste. Cook until tomato paste turns dark red.
  4. Add canned tomatoes, sugar, salt pepper, dried basil, red pepper flakes, and chicken broth.
  5. Simmer over medium or medium-low heat for 45 minutes or until flavors have combined. Add more water if needed.
  6. Bring the soup pot to a boil and add pasta. Stir frequently and cook until pasta is al dente.
  7. Add spinach, cook for 1-2 minutes until wilted.
  8. Ladle soup into large bowls and top with grated parmesan, mozzarella, and ricotta cheeses.

Testers Tips

Drop the rind of a parmesan cheese wedge into your soup while it's cooking to add some cheesy, delicious flavor! Save the parmesan cheese rinds for any soup like this!

Substitutions and Variations

This Easy Lasagna Soup is on of my family's favorite soups as written, but if you want/need to make some changes, go for it. Here are a few to consider:

  • Vegetable broth, beef Broth, or bouillon instead of chicken stock works great.
  • Ground turkey or chicken can be substituted for ground beef.
  • Substitute cream cheese or cottage cheese instead of ricotta.
  • In place of mozzarella, use cheddar cheese or even vegan cheese!
  • Mix up your pasta! Use any kind of pasta you want. Macaroni, broken spaghetti noodles, fettuccini noodles, rotini, etc.
Can you make lasagna soup in a slow cooker

Sure! After browning the meat, garlic, and onions in a large skillet, transfer to the Crock Pot and add the remaining ingredients setting the noodles, spinach, and cheese aside.

Cover and cook on low for 6-8 hours or on high for 3-4 hours. Add the noodles and cook for 30-45 minutes until the noodles are cooked through. Add spinach and cook until wilted. Serve with cheese.

What are some common mistakes when making lasagna soup?

Be careful not to add to much water/broth to your soup. And avoid overcooking your noodles. Breaking the noodles into consistent sizes will help make sure all is done cooking at the same time.

How can I make a quick lasagna soup?

Skip the canned tomatoes and use your favorite jarred marinara sauce to cut cooking time down. No need to simmer the tomatoes for 45 minutes if you use your favorite pasta sauce instead.

Storing Soup

Allow the soup to cool slightly, then put in a shallow airtight container to refrigerate for 3 to 5 days.
