I love all kinds of cereal treats.

In fact, I am sometimes a little ashamed of how many of them I can eat in one sitting-don't even make me think about consuming 6 cups of cereal and a whole bag of marshmallows all by myself.

But when I served these Chocolate Peanut Butter Rice Krispie Treats to a group of friends who spent the weekend here on the farm, I felt a whole lot better.

Why? Because they couldn't stop devouring them either! Make these with caution. You might have trouble controlling yourself.

How to Make Chocolate Peanut Butter Rice Krispie Treats

1. Dissolve the Sweet Base

In a large pot set over medium heat, combine light corn syrup and white sugar. Stir frequently as the mixture warms. The moment the sugar fully dissolves and tiny bubbles just begin to break the surface around the edges, immediately pull the pot off the heat-do not let it reach a full boil.

2. Stir in the Peanut Butter & Cereal

Stir creamy peanut butter directly into the warm syrup mixture until silky and completely blended. Pour in the crispy rice cereal and fold gently until it's evenly coated in the warm peanut butter mixture.

3. Press Into the Pan

Transfer the coated cereal mixture into a 13x9-inch baking dish lined with parchment paper or lighty coated with cooking spray. Gently press the mixture out into an even layer without packing it too tightly.

4. Melt the Topping & Chill

In a microwave-safe bowl, combine semi-sweet chocolate chips and peanut butter chips. Microwave in 30-second bursts, stirring thoroughly between each burst, until smooth and glossy. Pour the melted chocolate mixture over the top, spread it evenly with a spatula, and sprinkle with flaky sea salt. Let them cool completely until firm before slicing into squares.

Microwave Quick Method: Want to skip the stovetop entirely? Combine the sugar and corn syrup in a large microwave-safe bowl. Heat on HIGH for 1 minute, stir, and then heat in 30-second intervals until the sugar is dissolved. Stir in the peanut butter, fold in the Rice Krispies, and proceed with frosting!

Top Tips

Before measuring the corn syrup, coat your measuring cup with cooking spray--the syrup will pour easily out of the cup.

Do NOT boil the corn syrup and sugar mixture. As soon as the sugar is dissolved and it just starts to boil, remove from the heat. Otherwise, your mixture will be hard and too crispy.

To easily press the cereal mixture into the pan, wet your hands slightly with cold water, then use them to press the cereal mixture into the pan.

Why did my Rice Krispie treats turn out hard and dense?
