However, I set a little bit of the chicken aside for me to have a delicious and quick lunch that feels fancy. This sandwich filling has the perfect combination of flavors. It's rich, creamy, sweet, savory, and has a fantastic crunch to it. It makes for a perfect lunch or light dinner with a side of crunchy veggies, fresh fruit, or some potato chips.
If my middle baby angel knows there's cooked chicken in the fridge, he's asking if he can have it for his lunch box. Smart kid.

Chicken Salad Tortilla Wrap--use a tortilla or other wrap instead of bread
Chicken Salad Lettuce Wraps--use large butter or romaine lettuce leaves in place of bread for a lower-carb option
Ultimate Chicken Salad Recipe with Grapes--Use in place of Craisins and/or apples. Red or green grapes work just fine.
Plain Greek Yogurt--Use instead of Miracle Whip or Mayo
Storing
Store leftover Chicken Salad in an airtight container or cover in plastic wrap. Store in refrigerator for 2-3 days.
FAQ
Because this recipe has Miracle Whip or mayo as the base, it should not be frozen. The mayo base is an emulsion and therefore does not handle freezing well.
