    Great Way to Use Leftover Chicken or Turkey

    This Easy Chicken Salad Recipe is a great way to use leftover chicken or turkey. I often buy a rotisserie chicken when at the store to make a few quick dinners including Garlic Parmesan Chicken Pasta: One Pot or Rotisserie Chicken and Stuffing.

    However, I set a little bit of the chicken aside for me to have a delicious and quick lunch that feels fancy. This sandwich filling has the perfect combination of flavors. It's rich, creamy, sweet, savory, and has a fantastic crunch to it. It makes for a perfect lunch or light dinner with a side of crunchy veggies, fresh fruit, or some potato chips.

    If my middle baby angel knows there's cooked chicken in the fridge, he's asking if he can have it for his lunch box. Smart kid.

    Sometimes I'm crazy and use the whole chicken to make a big batch for an easy meal prep for a few days.

    Gluten-Free Chicken Salad Recipe

    Having a super simple gluten-free recipe in your back pocket is essential when entertaining guests these days. Food allergies and gluten sensitivity are becoming common.

    This Classic Chicken Salad Recipe can be made using leftover rotisserie chicken or leftover turkey. Plus, it's a delicious and thoughtful way to serve an easy meal all can enjoy.

    While most store-bought rotisserie chickens do not contain gluten ingredients, only a few are actually labeled gluten-free.

    Always use caution; some rotisserie chickens may contain gluten ingredients or wheat in the seasoning mixture. They may also be made in a shared environment with gluten ingredients.

    So, if your guest is super sensitive to gluten, double-check those labels!

    Ingredients

    Use ingredients you like to make the best chicken salad recipe that's custom-made for your family. There are various ways to make this classic sandwich. Here's a starting point!

    • Leftover Chicken or Turkey, cooked--Use chicken thighs or breast
    • Miracle Whip or Mayonnaise
    • Diced Red Onion or Green Onion
    • Diced Celery
    • Craisins--dried cranberries
    • Diced Green Apple
    • Chopped Pecans
    • Black Pepper
    • Bread of choice (favorite gluten-free bread) or Butter Lettuce cups or leaves

    How to Make Easy Chicken Salad Sandwiches

    Chop up leftover cooked chicken or turkey.

    In a large bowl mix chicken, Miracle Whip, onion, celery, craisans, apple, and pecans. Stir well to combine.

    Spread on sliced bread such as Fresh Milled Wheat Bread, croissant, bagel, tortilla, or lettuce leaf. Serve.

    Substitutions and Variations

    Chicken Salad Tortilla Wrap--use a tortilla or other wrap instead of bread

    Chicken Salad Lettuce Wraps--use large butter or romaine lettuce leaves in place of bread for a lower-carb option

    Ultimate Chicken Salad Recipe with Grapes--Use in place of Craisins and/or apples. Red or green grapes work just fine.

    Plain Greek Yogurt--Use instead of Miracle Whip or Mayo

    Storing

    Store leftover Chicken Salad in an airtight container or cover in plastic wrap. Store in refrigerator for 2-3 days.

    FAQ

    Can I freeze Chicken Salad?

    Because this recipe has Miracle Whip or mayo as the base, it should not be frozen. The mayo base is an emulsion and therefore does not handle freezing well.
