Air Fryer Pizza-Low Carb 🍕
Sometimes my body needs a little re-set. Eating too much junk and not enough of the good stuff.
But... my body still needs/wants pizza. This Low Carb Air Fryer Pesto Tortilla Pizza is a pizza fanatic's life saver!
In the summer, I love making my own pesto and look for every way possible to eat it fresh. I can eat it by the spoonful. Which is why my budget requires that I make it from scratch. I eat too much of it to have to buy it.
I also freeze my abundant pesto and use it all year long for dishes like Air Fryer Pesto Tortilla Pizza. Lawt! I'm thankful for the little taste of summer all year long.
If you don't make and freeze your own pesto, never fear! The store-bought jarred stuff works just fine.
What doesn't work fine for me is a soggy pizza crust of any kind. Following my technique prevents any of that soggy nonsense.
Ingredients for Low Carb Tortilla Pizza 🥣
Low Carb Flour tortilla, use fajita or soft taco size-I used Mission, Carb Balance Flour Tortillas. If you choose to use the larger burrito-sized Low Carb Tortillas, the result will be more of a bowl instead of a pizza crust. Cool, but not what I was looking for in this recipe.
Salted or Unsalted butter--your choice. I don't have any wisdom to share on alternative butters so I defer to you if you want to try them.
Pesto-Jarred or homemade Pesto.
Mozzarella cheese-any good melting cheese can work, but I like the mild flavor the mozzarella brings. If you have access to Provel Cheese, give it a try.
Cooked Sausage, mini pepperonis or other toppings of your choice. I look for ways to use up items in the fridge for my toppings. Just make sure all the toppings are cooked.
How to Get a Crispy Tortilla Pizza Crust 🧈
Preheating your Air Fryer is essential. Just turn that bad boy on while you get all your ingredients together. I turn mine on 400 for 3 to 5 minutes while I prep.
Then spread one side of your Low Carb Tortilla with butter, put it in the Air Fryer and cook it for about 3 minutes. Flip it over about half way if you feel like it.
I don't have one of those fancy grates to hold my crust down. So, I know my crust is crispy enough when I hear it flipping around. This means sometimes my tortilla crusts are a little wonky-shaped, but I don't mind. They taste good no matter what.
And most importantly, they are crispy!
Spread some of that pesto goodness on the tortilla. I like a lot of pesto on my pizza. Don't judge.
Also, don't get too close to the edge of your tortilla pizza crust or you will get your Air Fryer all messy. No one likes to clean the Air Fryer.
Cleaning the Air Fryer should only be used as a rare punishment. I don't have anyone who needs that kind of treatment in my house so I try to cook clean.
Top with cheese of your choice. Mozzarella is pretty typical, of course. It's mild and easily accessible. I almost always have it in the fridge.
Next, put your favorite cooked pizza toppings on: pepperoni, cooked burger or sausage, ham, bacon. You pick!
Cooked fruits/veggies such as peppers, onions, olives, pineapple, tomatoes, etc. certainly can go on, too. But remember, these pizzas cook quickly. Not nearly enough time for raw meats or veggies to get cooked.
This day, I didn't have any cooked veggies in the fridge so I skipped them. Plus, truthfully, I prefer simple flavors when it comes to pizza. Adding the mini pepperonis was living on the edge for me.
Carefully balancing, place your crispy Air Fryer Pesto Tortilla Pizza with all the toppings back in the Air Fryer for about 3 minutes or until it is cooked to your liking.
When the cheese is bubbly and a nice light brown... Oh.... Lordy! I can barely contain myself!
But be careful! This sucker is hot! Plus, you wouldn't want to dump all your delicious toppings off into your Air Fryer.
Use your tongs or spatula to carefully lift your Air Fryer Pesto Tortilla Pizza out of the Air Fryer. Place it on a cutting board and cut it into quarters.
Throw on a few pepper flakes and a little grated parm cheese and you will be impressed with yourself.
After you eat the whole pizza (or 2) you won't even feel guilty because Air Fryer Pesto Tortilla Pizza is low carb!
Cooking Time ⏲️
Air Fryers vary. So this may take some perfecting to get it just right for your equipment and toppings. For mine, I found that preheating the Air Fryer for 3 minutes, then cooking the buttered tortilla for around 2 minutes created my ideal crust.
After I put the toppings on the crust, my cheese was perfectly melted, and the toppings were sizzling in an additional 3 minutes.
Play with the cooking times a bit and don’t walk away while it’s cooking.
Which kind of cheese should I use on my Air Fryer Pizza? 🧀
Mozzarella, cheddar, swiss, provolone, etc can all work for Low Carb Air Fryer Pesto Pizza. But for a little shake up in my crazy life, sometimes I buy Provel cheese from our local deli.
Evidently, Provel cheese is a regional food for those of us "near" St. Louis, but if you have access to it, give it a try.
Provel is American cheese produced with a combination of many kinds of cheese, mainly cheddar, swiss, and provolone. Genius, huh?
Provel is a processed cheese that has a low melting point and appears gooey and buttery at room temperature. Need I say more?
Pro Tips 💭
To keep your Air Fryer clean, avoid getting sauce and toppings too close to the edge.
Use pre-cooked meats as toppings. Air Fryer Tortilla Pizzas don’t cook long enough to ensure a raw meat product is cooked through.
Use precooked sausage or bacon leftover from breakfast, or a little taco meat, hamburger, ham, pepperoni, etc.
Any type of shredded cheese you like can work here. Mozzarella is typical for pizza, but use what you have—cheddar, provolone, Swiss, etc.
Our local Italian market has Provel cheese which I love for this.
Use tongs to handle your Low Carb Air Fryer Pesto Tortilla Pizzas.
Pizza sauce can be used instead of pesto but is higher in carbs.

I tested Mission, Carb Balance Flour Tortillas for this recipe and they turned out fantastic.
These tortillas have just 4g net carbs and zero grams of sugar per serving.
Storing Low Carb Air Fryer Pesto Tortilla Pizzas ❄️
This is one of those foods that are just best fresh. Make them to order, then you don’t have to worry about leftovers.
However, if you made extras, they can be refrigerated for 3-5 days and safely reheated in the Air Fryer.

- Do not use the same utensils on cooked food, that previously touched raw meat
- Wash hands after touching raw meat
- Don't leave food sitting out at room temperature for extended periods
- Never leave cooking food unattended
Air Fryer Pizza-Low Carb
- Air Fryer
- 1 Tortilla Low Carb Tortilla soft taco size
- 1 teaspoon Butter softened
- 1 tablespoon Pesto Sauce jarred
- 3 tablespoons Shredded Mozzarella Cheese
- Choose one or more: cooked sausage mini pepperonis, cooked bacon, cooked hamburger, ham, etc.
- Preheat your Air Fryer—Heat it to 400 degrees while you assemble your ingredients. Just turn it on and leave it empty while you get your ingredients out of the refrigerator.
- Spread a thin layer of soft butter on one side of your tortilla. Then, Air Fry it for 2-3 minutes flipping it halfway through. I like to get mine pretty crispy before adding any ingredients to it.
- Spread pesto on precooked tortilla pizza crust. Being careful not to get too close to the edge.
- Sprinkle with cheese.
- Top with cooked meat of your choice.
- Carefully transfer your Low Carb Pesto Tortilla Pizza to the Air Fryer basket and cook for 2-3 minutes or until cheese is melted as desired.
- Using a spatula or tongs, remove HOT pizza from Air Fryer being careful not to lose your toppings. Place on cutting board to cut into pieces.
- Sprinkle with parmesan cheese and pepper flakes if desired
