Pumpkin Ice Cream Pie
Creamy, spiced, and practically effortless! Upgrade your fall dessert table with Pumpkin Ice Cream Pie in a crunchy Biscoff crust.

No Bake Fall Dessert
This pie brings all the cozy fall flavors we love-pumpkin spice, creamy filling, and a crunchy Biscoff cookie crust. But let's be real: here in the Midwest, we start craving the warm flavors of fall desserts long before sweater weather arrives.
Enter this easy, no-bake Pumpkin Ice Cream Pie. The perfect make-ahead fall dessert for Thanksgiving gatherings and holiday dinners. Or anytime you want pumpkin pie flavor with a frozen twist.

The Ingredients (And Why They Matter)
- Biscoff Cookies: Standard graham crackers are fine, but Speculoos Biscoff cookies bring a rich, deep caramelization and warm cinnamon-clove punch that elevates the crust from a simple base to a total showstopper.
- Melted Butter: The essential glue that binds the cookie crumbs into a sturdy, sliceable shell that holds its shape under a frozen filling.
- High-Quality Vanilla Ice Cream: Ice cream is the literal engine of this pie, so don't skimp here. Look for a dense, premium brand (like Blue Bell) with real vanilla bean flecks to give you a thick, silky texture.
- Canned Pumpkin Puree: Make sure you grab 100% pure pumpkin puree, NOT pre-spiced pumpkin pie mix. Pure pumpkin lets us control the exact ratio of spice, sugar, and salt so the dessert stays perfectly balanced.
- Warm Spices (Cinnamon & Nutmeg): A quick hit of high-potency spice transforms standard vanilla ice cream into a festive autumn flavor powerhouse.
- Kosher Salt: A pinch of salt cuts through the heavy cream and sugar, waking up all the flavors.
- Granulated Sugar & Vanilla Extract: Just enough sweetness to integrate the pumpkin seamlessly into the ice cream base.

How to Make No-Bake Pumpkin Ice Cream Pie
- Pulverize the Biscoff Base: Whiz the cookies in a food processor until they resemble coarse sand, then toss them directly with melted butter in your pie dish. Pressing the mixture firmly into the bottom and up the sides with the flat bottom of a measuring cup creates a packed, structural crust that won't crumble when sliced.
- Soft-Blend the Pumpkin Cream: Let your premium vanilla ice cream sit on the counter for 8 to 10 minutes until it yields easily to a spoon, then fold it gently with the pumpkin puree, sugar, spices, vanilla, and salt. Mixing at a soft-serve consistency ensures the pumpkin fully incorporates without melting the ice cream into a runny puddle.
- Fill, Set, and Freeze: Smooth the velvety filling evenly into your prepped Biscoff shell and transfer the entire pie straight to the back of your freezer. Giving it a solid 4-hour deep freeze allows the ice cream to reset and bind tightly with the pumpkin solids for effortless slicing.
Hint: To slice a frozen pie, dip a sharp knife in hot water and wipe dry. Dip and dry between each slice for perfect slices.

"In a Pinch" Ingredient Swaps
- The Crust: Out of Biscoff? Gingersnap cookies add a sharper, peppery ginger kick, while classic Graham crackers offer an easy, traditional honey note.
- The Spices: If you don't want to measure out individual cinnamon and nutmeg, swap them out 1:1 for a high-grade pre-mixed Pumpkin Pie Spice.
- The Sweetener: Swap the white sugar for real maple syrup or dark brown sugar to introduce a rich molasses undertone.

Creative Variations
- The Bourbon Brown Sugar Crunch: Fold 2 tablespoons of toasted pecans and a tiny splash of Kentucky bourbon directly into the ice cream mixture before freezing.
- The Salted Caramel Drizzle: Swirl warm salted caramel sauce over the top of the frozen pie right before serving to compliment the buttery speculoos crust.
- The Espresso-Chai Twist: Add a teaspoon of instant espresso powder to the spice mix for a "Pumpkin Spice Latte" ice cream pie.
Storage & Reheating Tips
- The Fridge Life: Do not store this pie in the fridge! Keep it strictly in the freezer until 10 minutes before you plan to serve it.
- The Container Matters: Wrap the pie dish tightly with a layer of plastic wrap pressed directly onto the ice cream surface, followed by a double layer of heavy-duty aluminum foil to guard against freezer odors.
- How long Can I Freeze It?: This pie thrives in the deep freeze for up to 2 weeks without losing its creamy texture or crisp crust.
Cooking for One or Two
If you aren't serving a full table, don't make a whole 9-inch pie. Divide the crushed Biscoff mixture into individual ramekins, press it down with the back of a spoon, and top with single-portion dollops of the spiced pumpkin ice cream. You get instant, single-serve frozen pie cups whenever the craving hits.
Top tip
This no-bake pie can be made days ahead and stored in the freezer, making it perfect for holiday prep.
FAQ
This is a perfect make-ahead dessert. You can prepare it 2-3 days in advance and keep it tightly wrapped in the freezer until ready to serve.
It will keep well for up to 2 weeks. Just be sure it's covered tightly to prevent freezer burn.
No-Graham crackers, gingersnaps, or even Oreos also work great. But Biscoff adds the best spiced flavor that pairs beautifully with pumpkin.
Freeze for at least 4-6 hours (or overnight). When ready to serve, let the pie sit out for 10 minutes to soften slightly, then dip a sharp knife in hot water between slices for clean cuts.
This happens if you use a "light" ice cream with high water content or if the ice cream melted completely into a liquid while mixing. Always use full-fat premium ice cream and mix it when it's soft-serve texture-never fully melted.

I love the creaminess of this pumpkin pie. The perfect no-bake transition into Fall!
A tasty hint of fall--pumpkin-y goodness even if it's still summer. And as good as the filling is, the crust is what puts this pie over the top. I suppose you can put a dollop of whipped cream on top but it doesn't need any embellishment. A tasty alternative to traditional pumpkin pie.
What a beautifully written review. Thank you! You've inspired me to write the recipe for just the crust so we can use it on other pies!
