In a stand mixer with the paddle attachment or a large mixing bowl, cream butter and sugar until light and fluffy.
¾ cup Butter, 1 cup Granulated Sugar
Add eggs, lemon juice, and lemon zest and mix just until combined.
2 large Eggs, 1 ½ teaspoons Fresh Lemon Juice , 1 Tablespoon Lemon Zest
Add the dry ingredients including flour, baking powder, salt, and almond extract. Mix just until flour is combined.
2 ½ cups All Purpose Flour, 1 teaspoon Baking Powder, 1 pinch Salt, ¼ teaspoon Almond Extract
Gently fold in fresh blueberries being careful not to smash the berries.
1 cup Fresh Blueberries
Using a large cookie scoop, scoop the cookie dough balls onto a parchment paper-lined baking sheet giving plenty of room for each cookie.
Dip the bottom of a glass into sugar and use it to flatten cookie dough balls.
Bake for 9-11 minutes or until the bottoms are light golden brown.
Allow cookies to cool on the pan for 1-2 minutes before moving them to a wire rack. Allow cookies to cool completely before frosting them.
To make the frosting: In a small bowl, stir softened butter, powdered sugar, and a pinch of salt until well combined. Add the lemon juice and stir until smooth. Adjust the thickness of your frosting by adding more powdered sugar if it's too thin or a little bit of lemon juice if it's too thick.
¼ cup Butter, 2 cups Powdered Sugar, 1 dash Salt, 2 Tablespoons Lemon Juice
Frost cookies and top with a blueberry for garnish, if desired.
