Preheat the oven to 350 degrees F. Line a baking sheet or frying pan with parchment paper.
Slice brioche bread into thick slices and cut off crusts.

In a small bowl, mix brown sugar and soft butter until well combined. Stir in honey, a pinch of salt, and a dash of cinnamon (optional).
3 Tablespoons Light Brown Sugar, 3 Tablespoons Butter, 1 ½ Tablespoons Honey, 1 pinch Kosher Salt, 1 pinch Cinnamon
Using a butter knife or offset spatula, spread the butter mixture evenly on both sides of each piece of bread.
Place the coated bread slices on parchment paper and bake for 14-16 minutes. Turn and cook for another 4-5 minutes or until both sides are caramelized and golden brown. Watch closely, as the caramelized sugar burns quickly.
Allow to cool on a cooling rack for 10 minutes before eating.
