set aside 2 tablespoons for rolling the cookie dough into

Instructions
Preheat oven to 375 degrees.
In a large bowl, cream together cookie butter, softened butter, white and brown sugars until light and fluffy.
Add the egg yolk. Stir just until combined.
Stir in flour, salt, and baking soda. Be sure it gets well combined.
Divide dough into 12 cookie balls. Form into balls and roll in 2 tablespoons of reserved sugar. Place on a cookie sheet.
Bake at 375 degrees for 9 minutes or until bottom of cookie is light golden brown. Allow cookies to cool completely on the cookie sheet.
Store in an airtight container.
