Preheat oven to 350 degrees F and spray a small loaf pan with cooking spray or line pan with parchment paper.
In a large mixing bowl stir together room temperature bacon grease and sugar. Add in egg, vanilla, and mashed bananas.
½ cup Granulated Sugar, ¼ cup Bacon Grease, 1 large Egg, 2 Bananas, ½ teaspoon Vanilla Extract
Into the bacon grease mixture, stir in the dry ingredients including flour, baking soda, and salt. Only stir until the flour is mostly incorporated.
1 cup All Purpose Flour, ½ teaspoon Baking Soda, ¼ teaspoon Kosher Salt
Gently fold in pecans and caramel chips or bits. Do not over-stir.
¼ cup Pecans, ¼ cup Caramel Chips or Caramel Bits
Pour batter into a prepared loaf pan.
Sprinkle top with raw sugar.
1 Tablespoon Raw Sugar
Bake for 25-35 minutes or until a toothpick inserted into the center comes out clean.
Cool completely in the pan.
Notes
NOTES:Fold in cooked, diced bacon for more bacon flavor.Ovens vary, as will cooking times. Be sure to check for doneness using a toothpick in the center of the loaf.
